CHILE LOVERS SPICY THREE MEAT CHILI
A unique chili using a mixture of meats. It is spicy and loaded with flavor. The name of this recipe used to be Chili Colorado, but I challenged my new friend, Chef #383557, to make and rename the recipe for me after he pointed out that it was not a typical Chili Colorado recipe. (Please see his delightful review. I changed the measurement of the stew meat because if his review and because I also prefer more of this meat in my chili. I also like his idea for marinading the stew meat.) It was all in good fun and I am pleased with the new name. Thank you Bruce! Thank you also too all the reviewers of this recipe.

Steps:
- Marinate stew meat with jalapeno juice, onion powder, and garlic powder.
- Refrigerate 24 hours.
- Brown hamburger with onion, garlic, bell pepper and 1/2 tablespoon cumin.
- Brown sausage.
- Remove stew meat from marinade and brown.
- Mix all the meat together.
- Add tomato sauce, tomatoes, drained beans, jalapenos, chili powder, 3 tablespoons cumin, cayenne, oregano, green chilies, salt, sugar, and Tabasco.
- Cook on medium heat for 2 hours.

CHILI CON CARNE

Steps:
- Pat the meat dry with a paper towel and season with the salt and pepper. Heat 2 tablespoons of the oil in a large stew pot or Dutch oven over medium-high heat. Sear the meat, in small batches, until well browned, adding more oil to the pan if needed. Transfer meat to a bowl and reserve.
- Discard all but 2 tablespoons of the oil from the pan. Saute the onions over medium heat for 10 minutes, scraping up the browned bits with a wooden spoon from the bottom of the pan. Add the garlic and saute for 2 minutes more. Stir in the chili powders, cumin, and oregano and cook for 2 minutes. Whisk in 5 cups of the stock. Add the meat and any accumulated juices to the pot. Bring to a gentle simmer. Season the chili with salt and pepper to taste, and stew the meat with a cover slightly ajar until almost tender, about 3 hours.
- In a food processor or blender puree half of the beans with the remaining stock. Add the bean mixture to the chili along with the whole beans. Simmer for 1 hour more or until the meat is tender. Season with salt and pepper to taste and serve with rice and selections of condiments, like sour cream, chopped cilantro, shredded cheddar, minced fresh or sliced pickled jalapenos.
AWARD WINNING CHILI CON CARNE
This chili recipe is many years in the making and I have won several awards with it. I think you'll be pleased with it. You can alter it to your own spice levels to achieve your perfect chili. Garnish with shredded mozzarella cheese, and use corn chips for dipping.

- Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
- Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
- Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
- In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

- In 3-quart saucepan, cook beef, onion and garlic over medium-high heat about 8 minutes, stirring occasionally, until beef is brown; drain.
- Stir in remaining ingredients except beans. Heat to boiling. Reduce heat to low; cover and simmer 1 hour, stirring occasionally.
- Stir in beans. Heat to boiling. Reduce heat to low; simmer uncovered about 20 minutes, stirring occasionally, until desired thickness.

CHILI CON CARNE

Add the garlic and cook, stirring for 2 minutes more. Stir in 1/4 cup chili powder, cumin, and oregano and cook for 2 minutes. Add the crushed tomatoes and 2 cups broth. Add the meat and any accumulated juices back to the pot. Bring to a gentle simmer. Season chili with salt and pepper, cover, and cook 30 minutes.
- 3. In a food processor or blender, puree half the beans with remaining 1/2 cup broth. Add both the whole and pureed beans to the chili. Let simmer, uncovered, until the meat is tender, about 1 hour more, stirring occasionally to prevent sticking. Stir in the remaining 1 tablespoon chili powder and season with salt and pepper, as needed. Serve chili over rice with condiments as desired.

3 IN ONE MEAT LOVERS CHILI CON CARNE
I made this hearty & very meaty Chili Con Carne on yesterday. I created 3 different meals from the one pot of Chili. It was so rich thick & hearty, had so much flavor. it is a great way to please every one. With chili Dogs, a hearty bowl chili plus Chili Mac. Top it with your favorite condiments & it is a meal to die for....

- 1. These are MOST of the ingredients that I used in the chili.
- 2. Chop the onions and bell peppers to desired size, then add them with the lean ground beef to a very large pot. Heat over medium high heat till meat has browned, and is no longer pink. Break with a large spoon as you go. I prefer using a wooden spoon.
- 3. Once meat is fully cooked, remove from heat, and drain excel liquid through a colander or strainer, then add the meat back into the pot and return to medium high heat.
- 4. Add all 3 cans of the tomatoes undrained, then stir to mix together. Then add the garlic powder and cumin. stir and continue to cook, stirring to prevent meat from sticking.
- 5. Now add the 3 packages of the chili mix, and stir to blend. Add the tomato paste, and stir and blend as it cooks. Stir in the tomato juice and continue to mix and allow to cook. Pour in water or beef broth, and stir. Add additional liquid if desired, but we like ours very thick. Lower heat and allow to cook for at least an hour or so or as desired. PLEASE BE SURE TO STIR, TO PREVENT MEAT FROM STICKING TO BOTTOM OF POT. Add hot dogs to pot if desired during last 10 minutes or so of cooking.
- 6. WHEN DONE assemble and serve as desired. Chili Mac adding your favorite condiments.
- 7. Warm Hot Dog buns if desired. Assemble chili dog and top with your favorite condiments.
- 8. Pile in the chili to a large bowl and top with what ever you like. Enjoy.
- 9. This is what the finished product looked like. So thick rich tasty & good. I could not resist showing you what the finished product looked like. NOTE: I PURPOSELY DID NOT ADD SALT OR PEPPER, BUT THAT IS A PERSONAL PREFERENCE.
