Spaghetti 12 oz
Olive oil 1 tbsp
Garlic 3 cloves
Heavy cream 3/4 cup
Chicken broth 3/4 cup
Italian cheese blend 3/4 cup
Kosher Salt
Black pepper
Chives 2 tbsp

Steps:

  • Cook the spaghetti according to the package instructions. When the spaghetti is al dente drain and reserve 1 cup of pasta water.
  • While the pasta is cooking, pour the oil into a large pan or skillet and heat over medium heat.
  • Add the garlic to the pan and cook for 1 minutes until it is fragrant. Pour in the heavy cream, broth, and ½ cup of the reserved pasta water.
  • Add the spaghetti to the sauce and stir well. Bring the sauce to a simmer.
  • Remove the pan from the heat. Stir in parmesan cheese. Mix well and add some more of the pasta water until sauce reaches the consistency you like. Season with salt and pepper to taste.
  • Serve in large bowls. Sprinkle some chopped chives on top to garnish.

A creamy, savory, baked spaghetti mac and cheese made with yellow cheddar, white cheddar and gruyere! How to make mac and cheese with spaghetti noodles in under an hour.

8 oz spaghetti noodles of choice ((I used chickpea noodles))
3 Tbsp butter
3 Tbsp flour ((gluten-free, if desired))
2 cups milk ((dairy))
½ tsp salt
¼ tsp black pepper
1½ cups shredded cheese of choice ((I used sharp white cheddar, yellow cheddar, & gruyere))
¼ cup shredded cheese of choice
2 Tbsp shredded parmesan

Steps:

  • Preheat oven to 350°F (180°C). (If you don't plan to bake your spaghetti in a casserole dish, you don't need to preheat the oven.)
  • Cook spaghetti noodles according to package directions.
  • In the meantime, melt butter in a large pot (big enough to hold the pasta).
  • Add flour and heat 1-2 minutes, stirring continuously.
  • Add milk, salt, and pepper and whisk to remove any lumps.
  • Cook over medium-high heat for about 5-6 minutes, until bubbly and thickened.
  • Stir in 1½ cups shredded cheese and whisk until melted and smooth. Remove from heat.
  • Add cooked and drained spaghetti noodles into pot and toss to coat with cheese sauce. (Feel free to stop here and enjoy spaghetti mac and cheese as-is!)
  • Transfer cheesy noodles to a glass baking pan or casserole dish. (My dish was 10x8-inches with a 6-cup volume.)
  • Add remaining ¼ cup shredded cheese and parmesan on top.
  • Bake 22-25 minutes. I recommend broiling at the end for a few minutes to brown the cheese on top!
  • Store leftovers in an airtight container in the fridge for 5-7 days.

3/4 teaspoon freshly ground pepper
1/4 teaspoon freshly ground nutmeg
1-1/2 cups panko bread crumbs
1/2 cup grated Parmesan cheese
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. Cook macaroni in a 6-qt. stockpot according to package directions for al dente. Drain; return to pot., In a large saucepan, melt 6 tablespoons butter over medium heat. Stir in flour until smooth; whisk in warmed milk. Bring to a boil, stirring constantly; cook and stir 2-3 minutes or until thickened., Remove from heat; stir in Gruyere and cheddar cheeses, salt, pepper and nutmeg. Add to macaroni, tossing to coat., Transfer to a greased 13x9-in. baking dish. Toss bread crumbs with Parmesan cheese and melted butter; sprinkle over casserole. 1 package (16 ounces) spaghetti
2 cups shredded part-skim mozzarella cheese, divided
3/4 cup grated Parmesan cheese
1/2 cup grated Romano cheese
3 large eggs, lightly beaten
1 tablespoon olive oil
2 teaspoons garlic powder
Salt and pepper to taste
3-1/2 cups spaghetti sauce

Steps:

  • Cook spaghetti according to package directions; drain. Transfer to a large bowl. 3/4 pound spaghetti
9 tablespoons olive oil
5 garlic cloves coarsely chopped
1 small onion, thinly sliced
16 cherry tomatoes, halved
16 kalamata olives, pitted and halved
4 eggs
1 cup heavy cream
2 teaspoons kosher salt
Freshly ground black pepper
1 teaspoon red pepper flakes, optional
6 fresh basil leaves, chopped
4 ounces fontina, grated
8 ounces feta, crumbled
8 ounces Parmesan, shredded
Fresh basil leaves, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a large pot of water to a boil. Generously add salt and 3 tablespoons of oil and add the spaghetti. Bring back to a boil and cook for 11 to 13 minutes until the spaghetti is just tender. Drain into a colander and rinse under cold water. Return the spaghetti to the pot and set aside.
  • Heat 2 tablespoons of the olive oil in a medium skillet over medium heat for 1 minute. Add the garlic and onion and cook for 3 minutes, stirring occasionally. Add the tomatoes, kalamatas, 1 teaspoon of salt and a few grinds of pepper and cook for an additional 5 minutes until the tomatoes begin to break down.* Remove the mixture from the heat and set aside.
  • Whisk the eggs and cream together in a large mixing bowl. Add the remaining teaspoon of salt, a few grinds of pepper, the red pepper flakes, basil, fontina, feta, 4 ounces of the Parmesan and the tomato mixture. Mix in the spaghetti.
  • Heat the remaining olive oil in the 10-inch skillet over high heat. Add the spaghetti mixture, reduce the heat to medium and cook for 5 minutes. Transfer the skillet to the preheated oven for 30 minutes until the center of the pie is set and the top is golden.
  • Remove from the oven and let cool for 10 minutes. Run a spatula around the edges and underneath the pie to loosen. Place a large plate over the skillet and invert the pie onto the plate. Place another plate onto the pie and invert again. Let the pie set for an additional 10 minutes.
  • Slice the pie into 6 to 8 pieces and garnish with the remaining Parmesan and basil leaves before serving.

1 pound large elbow macaroni
6 tablespoons butter
6 tablespoons all-purpose flour
3 cups milk
1 cup heavy cream
1 tablespoon freshly ground black pepper
1 pound white Cheddar, shredded
4 ounces Romano, shredded
4 ounces Asiago, shredded
2 cups bread crumbs (suggested: panko (Japanese) available at most markets)
2 tablespoons chopped fresh parsley, for garnish

Steps:

  • Preheat oven to 325 degrees F.
  • In large pot filled with water add 3 pinches of salt and the macaroni and place over high heat. Bring to a boil and let cook until al dente, about 8 minutes. Drain. Set aside.
  • In a large saucepan, melt butter. Sprinkle flour over butter and cook 2 to 3 minutes on medium heat, whisking until a roux or paste forms. Add cold milk and whisk vigorously until dissolved. Cook sauce on medium-low heat until thick and bubbly. Add heavy cream, all cheeses, 1 tablespoon of salt, and 1 tablespoon pepper. Cook until cheeses are fully melted, stirring occasionally.
  • Add cooked macaroni to cheese mixture and mix thoroughly. Place macaroni mixture in a 13 by 9 baking dish and top with breadcrumbs. Place in the oven and bake for 12 to 15 minutes or until golden brown. Top with fresh parsley and serve.
