SALMON AND ASPARAGUS IN FOIL
This is a quick and easy dinner. Pop the packets into the oven while you set the table and in 15-minutes you have a nutritious dish with virtually no clean up. Serve this with a rice or couscous dish and extra lemon on the side. This recipe was found at another web site.

Steps:
- Preheat oven to 450 degrees.
- Snap the ends off asparagus spears (they will break where tender) and divide into 4 equal portions.
- Spray the center of each foil sheet with non-stick cooking spray.
- Place one salmon fillet in the center of each sheet, top with a serving of the asparagus and drizzle with lemon juice.
- Sprinkle with fresh ground pepper and salt or seasoning blend as desired.
- Bring up the sides of foil and fold top over twice.
- Seal ends, leaving room for air to circulate inside the packet.
- Place packets on a cookie sheet and cook in oven for 15 to 18 minutes or until salmon is opaque.
- Serve with lemon wedges on the side.
- Please use caution when opening the foil packs, as the steam is very hot.
TOMATO BASIL SALMON
This quick salmon dish is perfect for a weeknight dinner. Serve with a side of sauteed spinach and a glass of pinot noir.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with a piece of aluminum foil, and spray with nonstick cooking spray. Place the salmon fillets onto the foil, sprinkle with basil, top with tomato slices, drizzle with olive oil, and sprinkle with the Parmesan cheese.

- Pat the salmon filets with a paper towel on all sides to remove excess moisture. This step is very important for a crispy exterior. Season with salt and pepper.
- Heat the olive oil over medium high heat in a large skillet. Place the salmon in the skillet, skin side up. Cook without moving the pan for 4-5 minutes until a golden exterior crust forms.
- Carefully flip the salmon and cook another 4-6 minutes until the fish is cooked to your liking. Remove the fish and set it aside.
- Add the butter and garlic to the pan. Cook for about 1 minute until garlic is fragrant.
- Remove from heat. Stir in lemon juice and parsley. Pour sauce over the salmon and serve.

- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking pan with aluminum foil.
- Sprinkle pepper on both sides of salmon steaks. Place on the prepared baking pan.
- Broil salmon under the preheated broiler until it flakes easily with a fork, 3 to 5 minutes per side.
- While salmon is cooking, stir mayonnaise, lemon juice, Dijon, and dill together in a small bowl until a smooth sauce is achieved.

239 CALORIE FOIL BAKED SALMON WITH ASPARAGUS
Steps:
- Preheat oven to 400. Wash asparagus and cut the spears in half and place in a large bowl. Sprinkle sea salt, pepper, and juice from half of a lemon over asparagus tops and stir. Cut a large piece of aluminum foil for pouch. Line 6-7 pieces of asparagus to create bed for salmon. Place salmon on top of asparagus. Sprinkle salt, pepper, and lemon juice over top. Place two pats of butter over salmon and top with two slices of lemon. Repeat to create several pouches. Fold foil pouches and close seam side up. Place in oven for 25-30 minutes, or until asparagus is fork tender.

- Mix together the mustard and maple syrup.

- Preheat oven to 400 degrees F. Cut four sheets of aluminum foil about 14-inch long. Divide asparagus into 4 equal portions (about 8 spears per foil packet) and layer in center of each length of foil.
- In a small bowl stir together oil with garlic. Drizzle 1 tsp of the oil over portion of asparagus then sprinkle with salt and pepper. Rinse salmon and allow excess water to run off, then season bottom of each fillet with salt and pepper. Layer fillets over asparagus.
- Drizzle top of each salmon fillet with 1 tsp of the olive oil mixture and season top with salt and pepper to taste. Top each with about 2 sprigs dill and 2 lemon slices (if using fresh thyme or rosemary use about 3/4 tsp per each if using parsley use 1 1/2 tsp).
