EASY CLASSIC SHRIMP AND GRITS
This classic, traditional Shrimp and Grits recipe is such delicious, gluten free Southern comfort food in only 30 minutes with the most YUMMY butter sauce!

- Bring 2 cups of the chicken broth, the milk (2 cups), 3 tablespoons of the butter, and a pinch of salt to a gentle boil in a medium sized pot. Add the grits and whisk together. Cover and simmer for 15-20 minutes, or until grits are fully cooked, soft, and creamy, whisking again every 5 minutes or so.
- Meanwhile, cook the 4 bacon strips until crispy in a nonstick or cast iron skillet. Set aside on a paper towel lined plate. Once cool, chop into small pieces.
- Drain all but 2 tablespoons of the bacon grease from the skillet.
- Rinse the shrimp with cold water and pat dry. Season with salt and pepper. Cook in the bacon grease until only just cooked- about 2 minutes per side.
- Add the remaining tablespoon of butter and 1/2 cup of chicken broth to the shrimp and stir until melted and broth is heated.
- When grits are finished cooking, remove from heat and stir in the cheese (1 cup) until melted.
- Serve the shrimp mixture over the grits, making sure to spoon some of the liquid from the skillet over the grits, and sprinkle with the bacon pieces and sliced green onions. Serve immediately.

- Bring 3 cups of water to a boil in a medium covered saucepan over high heat. Uncover and slowly whisk in the grits, 1 teaspoon salt and 1/2 teaspoon pepper. Reduce the heat to medium low and cook, uncovered, stirring occasionally, until thickened, about 5 minutes. Remove from the heat, stir in 1 tablespoon of the butter and the Parmesan and season with salt and pepper. Cover to keep warm.
- Meanwhile, sprinkle the shrimp with salt and pepper. Heat the oil in a large skillet over medium-high heat. Once the oil is hot, add the shrimp in a single layer and cook until the shrimp just start to turn bright pink on the bottom, 2 to 3 minutes. Add the wine and the peas, scraping up any browned bits on the bottom of the skillet. Bring to a simmer and cook, stirring occasionally, until the shrimp are opaque and cooked through and the peas are tender, 2 to 3 minutes (if the pan gets too dry, add water 1 tablespoon at a time). Add the tomatoes and scallions and toss with the shrimp and peas. Add the remaining 4 tablespoons butter and swirl the pan until there's a thick sauce.
- Serve the grits on a large platter and top with the shrimp, vegetables and butter sauce.

- Pour the grits into a large, heavy saucepan and fill with enough water to cover them. Drain off as much water as possible to remove any floating pieces of bran. Add the stock and milk and bring the mixture to a boil over high heat. Cover the pan and reduce to a simmer. Cook the grits, stirring occasionally to prevent them from sticking to the bottom of the pan, for 20 minutes. Partially uncover the pan and cook another 5-8 minutes until thickened. Stir in the cheese. Taste and season the grits with salt. Keep warm.
- Season the shrimp with salt and pepper and toss them with the seasoning blend. Heat 2 teaspoons oil in a large skillet (cast iron if you have it) over medium high heat and add the bacon. Cook the bacon for a few minutes until browned. Add the shrimp to the skillet and cook, stirring them often, until they just turn pink, 3-4 minutes (the shrimp will finish cooking later in the sauce). Transfer the bacon and shrimp to a bowl.
- Heat the remaining 2 teaspoons olive oil in the skillet over medium heat and add the scallions, bell pepper, and garlic. Season the vegetables with salt and cook until slightly softened, 4-5 minutes. Stir in the flour and cook another minute. Add the stock and cook another minute or two until the sauce thickens slightly. Stir in the lemon juice and hot sauce.
- Add the bacon and shrimp back to the pan and stir to combine. Cook another few minutes until the shrimp are cooked through. Taste and adjust seasoning as desired.
