20 MINUTE FRESH SALMON BURGERS
Fresh salmon burgers are my go-to busy weeknight dinner. Homemade salmon burgers are simple to make and nearly fail-proof. In other words, the pizza delivery guy can have the night off!

Steps:
- In a food processor, pulse the bread for 40-60 seconds until the bread resembles coarse crumbs. Pour the crumbs in a large bowl. Add the salmon chunks to the food processor and pulse until the salmon is ground and sticks together (about 30-60 seconds). Add the salmon to the large bowl.
- To the salmon and breadcrumbs add the remaining ingredients: lemon juice, red onion, mayonnaise, mustard, fresh herbs, salt and pepper. Stir the ingredients together.
- Form the ingredients into hamburger patties.
- In a large skillet (I use a large cast iron skillet), over medium-high heat, melt 1 tablespoon of butter or olive oil. Once the pan is hot, add the salmon burgers and cook for 5 minutes on each side, until lightly brown.
- Serve warm with lemon wedges (optional).

SALMON BURGER RECIPE
This easy salmon burger recipe comes together in about 20 minutes and is loaded with flaky roasted salmon, fresh herbs, and lemon zest for a family favorite everyone will love! It's the perfect quick and easy way to use up leftover roasted salmon and get a serving of heart healthy fish.

Steps:
- Add salmon, Panko, egg, lemon zest, mayo, Dijon, chives, and parsley along with a couple large pinches of salt and pepper to a medium-sized bowl.
- Mix just until well combined. Don't overmix!
- Divide salmon mixture evenly into 4 parts. Form salmon mixture into 4 patties that are about 1-inch thick.
- Grease a grill pan or grill with olive oil and heat over medium-high heat.
- Add burger patties and cook each side for about 3-5 minutes per side or until a dark golden-brown crust forms on the patties and they are cooked through.
- Serve salmon burgers on a Brioche bun with my infamous Dill Yogurt Sauce, lettuce, red onion, cucumber, dill, and capers. Enjoy!
