30 MINUTE DINNER ROLLS
I made these one time to go with soup that we were having for dinner. I made the dough balls too big and/or let them rise too much and they ended up being huge, but they were good and they were easy to make.

Steps:
- Mix warm water, oil, sugar and yeast; let rest for 10 minutes until yeast activates.
- Add salt and beaten egg; blend well.
- Add flour, one cup at a time until soft dough if formed.
- Knead on a floured surface 5-10 minutes or until dough is smooth and elastic.
- Shape into small balls (walnut sized) and put into a greased baking pan.
- Let rise at least 5-10 minutes.
- Bake at 425 degrees for 15-20 minutes.
- *If you have more time, you can let the rolls rise in the pan until they have doubled in size.

Steps:
- Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
- Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
- Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

Very quick and simple. Nothing is better than fresh hamburger buns. This is a very sticky dough that requires very little kneading.

- In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- Add oil, 2 cups of flour and the salt; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- Turn the dough out onto a lightly floured surface and divide into three equal pieces. Divide each big piece into 6 small ones. Form the pieces into rounds. Place the rounds into the prepared pan. Cover the rolls with a damp cloth or plastic wrap and let rise until doubled in volume, about 20 minutes.
- Beat together the egg white and water. Gently brush the risen rolls with the egg wash and then bake at 350 degrees F (175 degrees C) for 15 minutes or until the rolls are golden brown.

- 1. Pour warm water into a large bowl. Sprinkle yeast over water. Add sugar and salt and gently stir to completely dissolve.
- 2. Add egg, soft margarine, and 3 c. flour. Beat until smooth.
- 3. Gradually add 1 c. flour beating hard, then work remaining 2 c. flour into dough by hand until soft and smooth.
- 4. Do not knead. Place dough into large bowl and top with 1 T. melted butter or margarine and cover completely with a double layer of saran wrap and refrigerate.
- 5. Grease a bowl that is 2 to 3 times larger than the amount of dough. Use butter, or margarine. Put the dough in the bowl. Slide dough over and turn upside down. The bread dough is now greased on top. Cover bowl
- 6. Let rise until double and punch down once before 1st use. Store refrigerated - then punch down ONCE A DAY or shape as much or as little of the dough into equal portions.
- 7. Let rise until doubled in greased baking pan the desired portions. Preheated 350 degree oven - 20 minute rolls. Remove from oven and brush tops with melted butter or margarine. This dough can be stored 3 days total before baking.

- Preheat oven to 400*F.
- In a large bowl, combine 1 cup water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter, and salt.
- With a stand mixer or by hand, add flour, one cup at a time until you have a soft dough that isn't sticky. Knead by hand 10 minutes or 5 minutes with a stand mixer.
