2 Amish Recipes For Catsup
"AMISH" TOMATO KETCHUP, FOR CANNING
My dh's Amish mother raised him on this recipe. He MUCH prefers it over store-bought ketchup. It was a taste I had to acquire, but now my ds's also prefer this type of ketchup. Enjoy!

Steps:
- Mix all ingredients& boil for 2 1/2 hours, or until thick.
- Pour into jars.
- (no need to heat filled jars).
- I use'old' glass ketchup bottles.
- It is not necessary for these to'seal.
- 'My Amish mother-in-law has been making this her entire life, and has never used a'sealed' jar for this recipe, and it's always been great!

Here are two recipe I found in my Amish cookbook for Catsup. The first is frowm Mrs Perry Lambright. the second is from Mrs Jonas Yoder.

Steps:
- 1. Catsup best 2 gallons thich tomato juice 2 1/2 cups vinegar 1 tablespoon pickling spice mix 2 large onions (chopped) Boil these until onions are soft, then put through a sieve. and put back on the stove and boil 1 hour. Mix the following in a bowl and moisen with water. 8 cups sugar 8 tablespoons sure gel (found in the canning aisle) 1/2 teaspoon clove, ground 1/2 teaspoon connamon spice 7 tablespoons salt add to the juice and boil 10-15 minutes more. Put into canning jars and seal.
- 2. Catsup 4 qts cooked and strained tomatoes 2 tablespoons salt 3 cups sugar 2 cups vinegar 1 tablespoon cinnamon 1/2 tsp nutmeg 1/2 tsp red pepper 1 tsp allspice 1/2 tsp ground cloves 1/2 tsp dry mustard NOTE: There was no entry as to how to prepare, but I think if you used the one above you could figure it out.
