ONE-PAN RICE AND SAUSAGE SKILLET

Steps:
- Cook sausage in a large skillet over medium heat until golden brown, 5 to 7 minutes. Remove sausage to a plate.
- Pour wine into the hot skillet to deglaze the pan; bring to a boil while scraping the browned bits of sausage off the bottom of the pan with a wooden spoon. Add olive oil, followed by onion and garlic. Saute until onion is soft, about 4 minutes. Add water, lemon juice, and bouillon cube; mix well and bring to a boil. Fold in corn, creamed corn, and rice. Season with pepper.
- Mix well, gently breaking apart the rice. Simmer for 5 minutes. Add sausage and serve.

- In a large nonstick skillet, cook sausage over medium-high heat, turning occasionally, until lightly browned. Remove from skillet., In the same skillet, heat oil over medium-high heat. Saute squash, zucchini, pepper, onion, apple, garlic and salt until the vegetables are tender, 5-7 minutes. Add rice, beans, 1/4 cup water and sausage; cook and stir until heated through, about 5 minutes, adding more water if needed.

QUICK SAUSAGE & RICE SKILLET
This is a lost and found recipe. I originally found it in 1988, on the back of a package of smoked sausage. I made it quite often for my husband and me, with leftovers for the next days lunch. Then we moved, again, and the recipe got lost. I looked everywhere. I had tried to make it a few times, but couldn't remember everything that went in it, and it was wrong. Just wrong. In 1999, my husband's mother gave me a promotional copy of Quick Cooking magazine that she had received in the mail. I was so excited to find what appeared to be the exact recipe that I had lost, submitted by one of their contributors! After preparing it for my family, I knew I was right -- I had found our long-lost favorite! The original recipe merely specified cheddar cheese, but I find we like it better, and can use less, if I use extra sharp cheddar.

Steps:
- In a deep skillet (choose one that has a lid), combine soup, water and butter; bring to a boil.
- Add sausage and rice.
- Reduce heat; cover and simmer about 18 minutes or until rice is almost tender.
- Stir in peas and mushrooms.
- Cover and simmer 15 minutes more, or until rice is tender and peas are heated through.
- Sprinkle with cheese and cover.
- Let stand about 5 minutes, until cheese melts.
- NOTE: I've tried this with Cream of Mushroom soup and nobody liked it-- the Cream of Celery is essential to the flavor.

SAUSAGE & RICE SKILLET
I was inspired by another recipe on this site that called for peas & mushrooms. Hubby is phobic to both of those ingredients so I came up with this recipe as a way around it. It draws more on my cooking background with the addition of onions, bell peppers, and celery. **NOTE** You can substitue Turkey sausage to lower the fat and also substitute low sodium soup to bring down the sodium in the recipe.

Steps:
- Heat oil in a skillet and add the celery. Cook for 2-3 minutes then add the bell pepper. Cook for an additional 2-3 minutes then add the onion. Cook this until onion is starting to turn translucent or become soft.
- Remove casings from sausages and add the ground pork/sausage to the skillet with the onion mixture and cook until no longer pink.
- Add the rice, mixing thoroughly into the sausage mixture and then add in the soup, chicken stock, & water.
- Bring to boil, then reduce heat to low and allow rice to cook. This should take around 15-20 minutes.
- Sprinkle with 3/4 of cheese and mix all together. Sprinkle remaining 1/4 of cheese on top let stand for 5 minutes.
- NOTE: I've only made this with Cream of Celery soup. From what I understand Cream of Mushroom will not work per original recipe's author. The Cream of Celery soup is essential to the flavor.

- Add the onion snd bell pepper. Saute for 5 to 8 minutes until soft. Add the garlic, tomato paste, paprika, spice blend, salt, pepper and red pepper. Stir for about 1 minute until the garlic and spices are fragrant.
- Add the rice, chicken broth, diced tomatoes (along with the juices) and tomato sauce. Use a wooden spoon or spatula to scrape the bottom of the skillet and loosen anything that may be stuck to the bottom. Stir well to coat all the rice grains.
- Bring to a simmer then turn the heat down to medium-low and cover with a lid. Cook on medium-low heat for 25 minutes.
