SPEKKOEK - THOUSAND LAYER CAKE (LAPIS LEGIT)
Spekkoek is a Dutch-Indonesian layered cake. Also known as spekkuk and kue lapis legit or 'Thousand Layer Cake' due to the many layers the cake is made of.

- Line the bottom of your spring form with parchment paper. Clean a bowl with the lemon juice, just wipe it down with a kitchen towel. The lemon juice will remove any fat that's possibly still on the bowl. Use some of the lemon juice to wipe down the whisk you'll be using to whip the egg whites as well.
- Start with separating the egg yolks from the egg whites. Add the egg whites to the cleaned bowl. Next, cream butter and sugar in another bowl, add vanilla extract and mix till incorporated and add the egg yolks one at a time until fully incorporated.
- In a separate bowl (cleaned with the lemon juice), mix the egg whites till they're stiff. Fold the egg whites into the butter mixture. Once all of the egg whites are fully incorporated sift flour and salt and fold it in to the butter mixture a little bit at a time. Keep on adding the sifted flour and salt a little bit at a time till fully incorporated.
- Next, add the liquid coffee creamer and fold that in until incorporated.
- Divide the batter into two equal portions. Add the spekkoek spice to one part and mix till fully incorporated, you'll end up with a brown and a yellow batter.
- Preheat the grill/broiler of your oven to 350 °F / 175 °C.
- Take your lined springform and spread on about 2-3 tablespoons of the yellow batter on the bottom. Make sure you spread the batter evenly. Bake this first layer under the grill/broiler for a few minutes. You'll have to check how long it takes to bake the layer usually about 1-3 minutes, depending on your grill/broiler. Use a cake tester to test if the cake is done. Once the yellow layer is done, take it out of the oven and spread 2-3 tablespoons of the brown batter on the top of the first layer. Bake the second layer under the grill and spread 2-3 tablespoons of the batter onto the brown layer.
- Start at the top rack of your oven and as you add more layers move the rack down. This way you ensure that the cake doesn't just gets grilled/broiled from the top but gets baked on the inside as well. Keep on repeating the process until all of your batter is finished or until your springform is full. When the last layer is done take the cake out of the oven and cover with aluminum foil for 30 minutes.
- If needed, trim off the edges to show off the nice layers of the cake. Serve the spekkoek in small slices.

- Preheat oven to 350 degrees F (175 degrees C). Mix together the flour and baking powder; set aside.
- In a large bowl, beat the butter until creamy. Blend in the egg yolks, one at a time. Beat in the flour mixture alternately with the milk. The dough will be stiff like a cookie dough.
- Divide the dough into 10 pieces and shape into balls. Roll each ball into a 9-inch circle. Place on cookie sheets and prick with a fork in several places.
- Bake cookies in batches in the preheated oven for 10 to 12 minutes, or until edges are just starting to brown. Let cool.
- In a saucepan, boil the unopened cans of sweetened condensed milk for 3 hours. Monitor the water closely to make sure there is always water covering the cans. Remove cans from heat and let cool for 10 to 15 minutes.
- In a small measuring cup, combine the brandy and water.
- Place one cookie layer on serving plate. Brush with brandy mixture, then spread with the now-thickened condensed milk. Sprinkle with nuts. Continue stacking until all layers are used.

- Prepare the crepe batter in 2 separate batches. In a very large bowl, whisk together 12 cups (1.5 kg) of flour, ½ cup (100 g) of sugar, and 2 teaspoons of salt.
- Create a well in the center and add 24 eggs. Stir together vigorously with a large wooden spoon until combined.
- Add 1 cup (240 ml) of milk and continue to stir vigorously until combined.
- Add 1½ cups (345 g) of the melted butter. Stir until combined.
- Gradually add 14 more cups (3.3 l) of milk to the batter, stirring well after each addition. Once the batter has loosened a bit, switch from the wooden spoon to a heavy duty whisk. Whisk vigorously to remove any clumps.
- Once the milk is incorporated and there are no more lumps, whisk in 1 cup (240 ml) of water and 2 tablespoons of vanilla.
- Place the batter in the fridge to rest for 1 hour.
- Repeat steps 1-7 to prepare the second batch of batter.
- Heat a large round electric griddle to 375˚F (190˚C).
- Pour ½ cup (120 ml) of batter onto the heated griddle and swirl evenly to coat. Fill in any gaps with extra batter.
- Cook for approximately 2 minutes, until the crepe begins to lightly brown on the bottom.
- Flip the crepe and cook for another minute on the other side. Remove from the pan and set aside to cool. Repeat 99 more times. This will take approximately 5 hours.
- Place the completed crepes in stacks of 10 and store, covered, in the fridge until ready to assemble the cake.
- Make the vanilla pastry cream: In a large stock pot set over medium heat, add the egg yolks, milk, cream, sugar, salt, and cornstarch. Whisk vigorously to combine.
- Whisk constantly until the mixture thickens significantly and bubbles just begin to burst on the surface. You do not want to let the mixture come to a full boil. This will take approximately 10-15 minutes.
- Remove the pot from the heat and add the butter and vanilla. Stir until fully incorporated.
- Repeat to make the other flavors of pastry cream. Mix in each flavoring while the cream is still warm, after incorporating the butter.
- Pour the cream onto a baking sheet lined with plastic wrap. This will ensure the custard cools safely and quickly. Cover with more plastic wrap, ensuring the plastic touches the surface to prevent a skin from forming.
- Immediately place in the fridge to cool and set, overnight.
- To assemble the crepe cake, place 1 crepe on a large cutting board or baking sheet (you will need to be able to transfer the cake to and from the freezer).
- Spread about ½ cup (110 g) of the cooled pastry cream (flavor of your choice) evenly over the crepe.
- Place another crepe directly on top and spread with more pastry cream. Repeat until you have 25 crepes stacked with the first filling.
- Transfer the assembled cake to the freezer to chill for 15 minutes between flavors.
- Repeat with each flavor of pastry cream, layering 25 crepes with each flavor filling. Make sure to freeze the cake for 15 minutes after every 25 layers.
- Once assembled, freeze the cake for 30 minutes to set and firm up.
- Dust the top with powdered sugar, then slice and serve. Sticking a wooden dowel into each slice will help the cake keep its shape.

SPEKKOEK (THOUSAND LAYER SPICE CAKE)
A Dutch/Indonesian butter cake, best-known for being served with coffee after the ever-popular Dutch/Indonesian rijsttaffel. A good Spekkoek will have at least 12 layers or more. The heat of the grill browns the top of each layer, giving the cut cake its neat horizontal striped look. Spekkoek will keep moist and fresh in a cake tin or in the fridge for a week, well wrapped in a greaseproof paper. It can also be frozen if wrapped in a layer of aluminium foil. Because of the richness of the cake, it tends to be served in very small pieces, usually thin slices.

- Cream butter and sugar together with an electric mixer. Beat in egg yolks. In another bowl, using clean beaters, beat egg whites with salt until stiff. Fold into yolk mixture. Fold in flour.
- Divide batter between two bowls. Add combined spices to one bowl; stir well.
- Line the bottom of a buttered 9" round cake pan (or springform pan) with wax paper and butter the wax paper. Pour about 1/2 cup of the spice batter into the pan, spreading to form a thin layer. Place pan under a preheated broiler for 2 minutes, or until the layer is firm and very lightly browned. Spread 1/2 cup of the plain batter over the top and broil until firm. Repeat layering and broiling until all batter is used.
- Let cake cool, then remove from pan. Sprinkle top with confectioners' sugar. Serve in thin slices with strong, hot coffee.
