GRANDMOTHER'S POUND CAKE II



Grandmother's Pound Cake II image

This recipe is over 100 years old and is the original kind of pound cake: it contains 1 pound each of butter, sugar, eggs and flour and contains no salt, baking powder or flavoring (but flavoring such as vanilla extract or almond extract can be added if desired!)

2 cups butter
3 cups white sugar
6 eggs
4 cups all-purpose flour
⅔ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 8x4 inch loaf pans, then line with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour alternately with the milk, mixing just until incorporated.
  • Pour batter evenly into prepared loaf pans. Bake in the preheated oven for 70 minutes, or until a toothpick inserted into the center of the cakes comes out clean. After removing them from the oven, immediately loosen cake edges with a knife. Allow to cool in pans for 10 minutes, then remove from the pans. Strip off the parchment paper and cool completely on wire racks.

This is an old recipe for spice cake made with salt pork and raisins. It's baked in a tube pan and contains no eggs or dairy.

½ cup brandy
2 ½ cups raisins
1 ½ cups dried currants
½ pound finely ground salt pork
1 cup boiling water
1 cup molasses
½ cup brown sugar
3 ½ cups all-purpose flour
1 teaspoon baking powder
1 tablespoon ground allspice
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves

Steps:

  • In a medium saucepan, combine brandy, raisins and currants. Bring to an boil, then remove from heat. Set aside until all liquid is absorbed and mixture is cooled.
  • Preheat oven to 275 degrees F (135 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour, baking powder, allspice, cinnamon, nutmeg and cloves. Set aside.
  • In a large bowl, combine the ground salt pork, boiling water, molasses and sugar. Beat well. Add the flour mixture and beat until incorporated. Stir in the raisin mixture. Pour batter into prepared pan.
  • Bake in the preheated oven for 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool 15 minutes in the pan. Remove from pan and cool completely.

This recipe is one that my Grandma Lewis would make when she had the ingredients on hand -- because the family lived deep in the mountains of West Virginia a quick trip to the store was not feasible especially during the winters months. My grandma was a terrific cook and never measured ingredients (old school of little bit of this, little bit of that) but it didn't matter because whatever she cooked always tasted good and filled you up! This recipe is one of my dad's favorites and I hope you like it, too!

1 pint black coffee, strong
1 lb fat pork, fresh ground
1 lb walnuts, chopped
1 lb raisins
1 lb dates, cut up (optional)
1 medium orange, peeled (optional)
1 lb candied fruit (optional)
4 cups brown sugar
7 cups all-purpose flour
1 tablespoon baking soda
1 tablespoon baking powder
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
1 cup applesauce
1 cup citron

Steps:

  • Grease and flour 2 bundt pans. Preheat oven to 325 degrees.
  • Put pork and raisins in a large mixing bowl (6qt.+) and pour hot coffee over them; Set aside allowing some time to cool.
  • Sift together all measured dry ingredients; Mix in walnuts.
  • Stir pork mixture carefully in case the coffee is still hot. Slowly begin to add sifted dry ingredients with walnuts and combine together thoroughly.
  • Mix in applesauce and citron.
  • Pour into greased and floured bundt pans. Bake for 1-1/2 to two hours or until done.

This is a sweet meat cake from Gramma Stevens' ziplock recipe bag. It's so unique, it makes you wonder what people were thinking 150 years ago. And... could it possibly contain raisins? 1 lb salt pork (all fat)
1 pt boiling water
4 c sugar
1/2 c molasses
1 egg, well beaten
6 c flour, sifted
1 tsp baking soda
1 tsp nutmeg
1 Tbsp cinnamon
1 tsp cloves
1 lb raisins

Steps:

  • 1. Put pork thru grinder, pour boiling water over it and let stand until lukewarm.
  • 2. Stir in sugar, spices, soda, well beaten egg and molasses.
  • 3. Sift flour and add to fruit and then to pork mix. Stir until well blended.
  • 4. Pour into well greased baking pan and bake 2 hours in a 300 degree oven or until done.
  • 5. Gramma Note: This cake can be eaten as soon as baked and cooled, or it will keep for weeks. Good for outdoors picnics.
