SCRUMPTIOUS FROSTED FUDGY BROWNIES
MMMMMMM, I can never eat just one of these melt-in-your-mouth brownies, they are so rich and chocolaty.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 13x9-inch baking pan. Place 8 ounces of baking chocolate with 1 cup of butter in a microwave-safe bowl, and microwave on High until the chocolate is soft and the butter has melted, about 2 minutes. Stir to mix.
- Place the eggs, 3 cups of sugar, and 1 tablespoon of vanilla extract in a large bowl, and beat with an electric mixer on high speed for 2 minutes. Reduce the mixer speed to low, and beat in the melted butter-chocolate mixture. Beat in the flour until just combined (do not overmix), and stir in the chopped walnuts. Spread the batter in the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out with fudgy crumbs, about 35 minutes. Cool in the pan before frosting.
- To make frosting, combine 1 1/4 cup of sugar with the heavy cream in a saucepan over medium heat, and stir until the sugar dissolves and the mixture begins to simmer, about 3 minutes. Reduce the heat to low, and let the mixture simmer for 7 minutes without stirring.
- Remove the cream mixture from the heat, and stir in 5 ounces of baking chocolate and 1/2 cup butter, stirring to melt and blend the chocolate. Add 1 teaspoon vanilla extract; whisk until smooth. Place the frosting in the refrigerator and stir every few minutes until the frosting is chilled and thick, about 30 minutes. Frost the cooled brownies, and cut into squares.

I made these incredible brownies as my brother's birthday cake (11/2005)--friends still remember the taste and ask for the recipe! Taken from BH&G "New Cook Book", 1989.

Steps:
- In mixing bowl, combine flour, sugar, baking soda, and salt. Set aside.
- In medium saucepan, combine 1 cup butter, 1 cup water, and 1/3 cup unsweetened cocoa.
- Bring mixture just to boiling, stirring constantly.
- Remove from heat.
- Add chocolate mixture to dry ingredients and beat until thoroughly combined.
- Add eggs, the 1/2 cup buttermilk, and 1 1/2 teaspoons vanilla. Beat for 1 minute (batter will be thin).
- Pour batter into greased and floured 15x10x1 baking pan. Bake at 350F for about 25 minutes or until toothpick inserted into the center comes out clean.
- FROSTING:.
- In medium saucepan, combine 1/4 cup butter, 3 tablespoons unsweetened cocoa powder, and 3 tablespoons buttermilk. Bring to boiling; remove from heat. Add powdered sugar and 1/2 teaspoon vanilla. Beat til smooth. Pour warm frosting over warm brownies, spreading evenly. Cool in pan on wire rack, then cut into bars.

- In a saucepan, melt butter. Remove from the heat. Stir in cocoa; cool. In a large bowl, beat eggs and sugar until blended. Combine flour, baking powder and salt; gradually add to egg mixture. Stir in vanilla and the cooled chocolate mixture until well blended. , Spread into a greased 13x9-in. baking pan. Bake at 350° until a toothpick inserted in the center comes out clean, 25-28 minutes (do not overbake). Cool on a wire rack. , For frosting, in a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in cocoa and vanilla. HERSHEY'S BROWNIES WITH ICING
I searched for years for a brownie that was more ooey gooey than cake like and here it is. I make it in a 9X13 pan and it dissapears FAST. I found this on the back of a Hershey's Cocoa can and the icing is from a friend.

Steps:
- For brownies heat oven to 350 degrees. Spray a 9x13 pan with non stick cooking spray.
- In large microwave safe bowl place butter and microwave until melted.
- Stir in sugar and vanilla.
- Add eggs one at a time, hand beating well with spoon after each addition.
- Add cocoa; beat until well blended.
- Add flour, baking powder and salt; beat well.
- Stir in nuts if desired.
- Pour batter into prepared pan and bake for 30 - 35 minutes (I underbake mine for 25 minutes).
- Drop icing on hot brownies and spread with a rubber spatula as icing melts. Cool completely and cut into bars.
- For icing. Melt butter then wisk in the cocoa, butter and powder sugar. Icing will be thick but will melt when placed on hot brownies and make like a thin chocolate coating. The brownies are still good without the icing but what the heck, go for it!

- Stir oil or melted butter, sugar and vanilla together in large mixer bowl.
- Add eggs, beat until well blended using a spoon.
- Combine flour, cocoa, baking powder and salt; gradually add to egg mixture.
- Add nuts if desired.
- Spread into a greased 9 inch square pan.
- Bake at 350° for 20-25 minutes or until brownie pulls away from the edge of the pan.
- Cool in the pan.
- Frost with Creamy Brownie Frosting if desired.

- Creamy Brownie Frosting Instructions:.
- Cream butter, cocoa, corn syrup or honey and vanilla in small mixer bowl.
- Add powdered sugar and milk; beat to spreading consistency.

SCRUMPTIOUS BROWNIES
I begged a friend of mine that made these for his recipe. Oh my, I couldn't get enough of them. These are very moist and dense and they sort of remind me of fudge. Yum!

Steps:
- Preheat oven to 350°.
- Chop or break chocolate into small pieces.
- In a small saucepan, add chocolate pieces and butter and melt, stirring, over very low heat.
- When Chocolate is completely melted, remove from heat and stir to combine with butter.
- Set aside to cool.
- Butter well a 9 x 13 pan.
- In a medium bowl, add brown sugar and stir in the eggs, mixing well after each addition, breaking up any lumps of sugar.
- When all the eggs have been added, stir in granulated sugar, vanilla and salt.
- Add the chocolate and butter mixture to egg mixture, then slowly stir in flour.
- Add 1/2 the pecans and stir to combine.
- Pour into prepared pan.
- Spread remaining pecans over the top of brownie batter and gently press into the batter.
- Bake at 350° for 30-35 minutes or until toothpick inserted comes out clean and they begin to pull away from pan.
- Cool brownies completely, then refrigerate at least 4 hours.
- Cut into bars and serve.
- They keep about a week if stored in an airtight container.

- Preheat the oven to 350°F. Line a 9X13 baking dish with aluminum foil, overhanging the edges 2 inches. Spray with nonstick cooking spray.
- Set a medium, shatterproof bowl over a pan of just simmering water. Add chocolate, butter, and instant espresso. Stir occasionally until chocolate and butter are melted and the mixture is smooth.
