CHINESE MEAT SAUCE NOODLES

Number Of Ingredients 14

1 serving of noodles of your choice
⅓ cucumber, cut into match size sticks
half a cup ground beef
a quarter cup diced onion
2 dried shiitake mushroom, rehydrated and diced
1 tablespoon diced ginger
2 tablespoon chopped green onion
2 tablespoons oil
For the sauce:
3 tablespoons soybean paste
2 tablespoons sweet bean sauce
2 tablespoons cooking wine
3-4 tablespoons water
a quarter teaspoon sugar

Steps:

  • Cook the noodle with boiling water by following directions on the package, rinse under cold water, drain well and set aside.
  • Whisk soybean paste, sweet bean paste, cooking wine, water and sugar in a container in advance and set aside for later use.
  • Heat a pan under medium-low heat, add oil and stir in mushroom, onion, ginger and green onion, stir fry for 3-4 minutes until the onion turns translucent.
  • Add the ground beef into the pan, stir fry for 1-2 minutes until the beef has turned color.
  • Pour in the sauce, stir and mix well with the ingredients and simmer for about 2-3 minutes with low heat.
  • Pour the meat sauce onto the noodle and top with cucumber to serve.
  • Mix well to enjoy!

2 tablespoons vegetable oil, plus 1 teaspoon, divided
1 tablespoon garlic, plus 1 teaspoon minced, divided
1 tablespoon fresh ginger, minced
1 tablespoon shallot, minced
4 oz ground pork, 80/20
1 tablespoon soy bean paste, fermented
1 tablespoon sweet bean sauce
1 teaspoon dark soy sauce
¼ cup cornstarch slurry, 8 teaspoons cornstarch mixed with 4 teaspoons water
1 large egg, beaten
⅔ lb fresh noodles, of choice
1 persian cucumber, thinly sliced
½ cup fresh cilantro leaves

Steps:

  • In a medium pan, heat 1 tablespoon of vegetable oil over medium heat. Add 1 tablespoon of minced garlic, the ginger, and shallot and sauté until lightly aromatic, 1-2 minutes. Add the ground pork to the pan and cook, undisturbed, until golden brown, 3-5 minutes.
  • Meanwhile, in a small pan, heat another tablespoon of vegetable oil over medium-low heat. Add the soy bean paste and sweet bean sauce and cook until caramelized, 1-2 minutes, being careful not to burn.
  • Add the caramelized bean paste mixture to the ground pork mixture and stir to combine. Add the soy sauce and cook for another 30 seconds to incorporate. Add the cornstarch slurry, reduce the heat to low, and simmer for about 15 minutes, adding a few tablespoons of water at a time as needed to keep the mixture at a simmer.
  • Meanwhile, heat a small pan over low heat. Add the remaining teaspoon of vegetable oil, then pour in the egg and tilt the pan to spread in a thin layer. Cook until the top is just set, then remove the egg crepe from the pan. Let cool, then thinly slice.
  • Cook the noodles according to the package instructions, then drain.
  • Place the cooked noodles in a serving bowl and top with the ground pork mixture. Garnish with the egg crepe strips, cucumber, cilantro, and remaining teaspoon of minced garlic.
  • Enjoy!

4 tbsp dry yellow soybean paste
1 tbsp sweet bean sauce (or hoisin sauce)
300 ml water (1 1/4 cup )
2 tbsp cooking oil
1 star anise
2 stalk scallions (chopped)
1 tsp ginger (minced)
200 g pork, diced (7oz (see note 1))
1 tsp Shaoxing rice wine
150 g beansprouts (5oz )
150 g fresh green soybeans/edamame (5oz )
1 large cucumber (julienned)
6 radish (sliced)
4 servings fresh or dried noodles (see note 2)

Steps:

  • In a bowl, dilute dry yellow soybean paste and sweet bean sauce (or hoisin sauce) with water. Set aside.
  • Heat up oil in a wok over medium-high heat. Add star anise, spring onion (the green part) and ginger. Leave to sizzle until fragrant. Stir in pork and rice wine. Cook until the pork becomes pale.
  • Pour in the diluted sauce. Bring it to a boil then leave to simmer for 20 minutes.
  • Then boil on full heat to thicken the sauce to the desired consistency. Stir in the white part of the scallions.
  • Blanch beansprouts and green soybeans in boiling water (cucumber and radish are served raw). Take them out then drain.
  • In the same pot, cook noodles. Drain and rinse under cold water for a few seconds.
  • Place the noodles in 4 serving bowls. Top with the sauce and vegetables.

  • Add sweet bean sauce to a medium sized bowl. Slowly blend in water and stir constantly, until water is fully incorporated.
  • Heat a wok (or a heavy bottomed skillet) over medium high heat. Add oil and wait until oil is hot, 2 to 3 minutes. Add pork and stir constantly, until the surface turns mostly white. Swirl in sweet bean sauce. Turn to medium heat and keep stirring constantly, until the sauce turns almost black, about 10 mins. If the sauce thickens too quickly and starts to feel like it's sticking to the bottom of the wok, slowly blend in warm water, 1/2 cup at a time. Reduce the heat if the wok gets too hot.
  • Add onion into the sauce and keep stirring, until fully cooked but still crisp, 3 to 5 minutes. Stop heat and transfer the sauce to a large bowl.
