Simmered Sirloin with Noodles image

We always have noodles in the pantry and wanted something simple to serve over them for a fuss-free meal. This creation, perfected over the years, is now a family favorite.

1-1/4 pounds beef top sirloin steak, cut into thin strips
2 medium onions, chopped
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 garlic clove, minced
1 tablespoon butter
2 cups condensed beef consomme, undiluted
4-1/2 teaspoons Worcestershire sauce
1 teaspoon dried basil
3 tablespoons all-purpose flour
1/4 cup cold water
6 cups hot cooked yolk-free noodles

Steps:

  • In a large nonstick skillet, cook the beef, onions, mushrooms and garlic in butter over medium heat for 5-7 minutes or until the meat is no longer pink. Add the consomme, Worcestershire sauce and basil; bring to a boil. Reduce heat; cover and simmer for 50-60 minutes. , Combine flour and water until smooth; add to beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over noodles.

1 pound sirloin steak, cut into 1-inch cubes
2 tablespoons butter
1 large onion, sliced
1 cup beef stock
2 bay leaves
1 pinch dried thyme
salt and ground black pepper to taste
1 cup frozen peas
1 tablespoon cornstarch
4 cups egg noodles

Steps:

  • Heat a skillet over medium-high heat; cook steak, working in batches, until seared and browned on all sides, about 5 minutes. Transfer seared steak to a plate.
  • Melt butter in the same skillet over medium heat and saute onion until softened, 5 to 10 minutes. Add steak to onion and pour beef stock over steak; season with bay leaves, thyme, salt, and pepper. Bring to a boil, reduce heat to low, cover skillet with a lid, and simmer until steak is tender, 50 minutes to 1 hour 50 minutes. Stir peas and cornstarch into steak mixture; cook uncovered until liquid thickens, about 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes; drain. Serve beef mixture over noodles.

One 9-ounce ribeye steak
1 tablespoon plus 1 teaspoon sesame oil
Sea salt
1 clove garlic, finely chopped
3 tablespoons dark soy sauce
1 tablespoon rice wine vinegar
2 teaspoons gochujang
1/2 head Napa cabbage, cored and thinly sliced
6 spring onions, thinly sliced
9 ounces udon noodles, cooked and cooled
Roasted and salted peanuts, roughly chopped
Fresh cilantro leaves, for garnish

Steps:

  • Heat a medium skillet over medium-high heat. Rub the steak with 1 tablespoon of the sesame oil and sprinkle generously with salt. Cook the steak until browned and medium-rare, 3 to 4 minutes per side. Remove to a plate, cover with foil and let rest for 5 minutes.
  • Meanwhile, whisk together the garlic, soy sauce, vinegar, gochujang and the remaining 1 teaspoon sesame oil in a small bowl.
  • Arrange the cabbage, spring onions, noodles and peanuts in two serving bowls.
  • Thinly slice the steak against the grain and divide between the bowls. Pour the sesame dressing over the top and garnish with cilantro leaves.

This dish - basically beef in a savory gravy, served over egg noodles - is my favourite dish from childhood. I now make it for my husband, and he loves it too!

1 1/2 lbs sirloin steaks
1 tablespoon shortening
1 (21 g) envelope brown gravy mix
2 cups water
1 tablespoon dried onion flakes
1 tablespoon brown sugar
2 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
1/4 teaspoon ground ginger
1 bay leaf
1 (375 g) package broad egg noodles, cooked

Steps:

  • Cut meat into 1-inch squares.
  • Brown meat in hot shortening in a large saucepan or deep skillet.
  • Transfer meat to a casserole or small roasting pan.
  • To the pan, add water and gravy mix.
  • Bring to boiling, stirring constantly.
  • Stir in onion, brown sugar, vinegar, Worcestershire sauce, ginger, and bay leaf.
  • Season to taste with salt and pepper.
  • Pour sauce over meat in casserole, and cover.
  • Bake at 350 degrees F for 1 1/2 hours.
  • Serve over hot cooked noodles.

PATRICK'S FAST AND DELICIOUS BEEFSTEAK TIPS AND NOODLES



Patrick's Fast and Delicious Beefsteak Tips and Noodles image

This recipe achieves three of four important considerations -- you get FAST, DELICIOUS and EASY, but, New York strip steaks are not all that CHEAP. Still, if you were using a lesser cut of meat, you will be at your stove for quite a bit longer to tenderize the meat. Also, the strip steaks are all lean except for the fat that gets trimmed off around the edges. You could also substitute rib-eye steak in this recipe, which work equally well. This dish (except for boiling the noodles) could also be easily carried out using a wok and a gas grill, or, even with a wok in campfire coals. If you're camping, just make the noodles up in advance and store them in a zip-lock bag in your cooler. They can be quickly reheated in a pan with a little olive oil at the campfire. In any case, I really enjoy this dish and so does my family -- for us, it's worth a little extra expense by using good steak for the beef tips, especially since it saves time.

1 lb wide egg noodles, dry
1 1/2 lbs New York strip steaks, all fat trimmed and cut into 3/4-inch chunks
1/4 teaspoon kosher salt
3 tablespoons olive oil, divided
1/2 teaspoon black pepper, freshly milled
3 quarts water
15 ounces beef broth (canned)
pan dripping (from frying steak)
1/2 teaspoon Kitchen Bouquet
2 tablespoons Wondra Flour
1/4 teaspoon seasoning salt
1 garlic clove, chopped fine
3 tablespoons butter
14 ounces sliced mushrooms, drained (canned)
1 teaspoon sugar

Steps:

  • Prepare the noodles: Boil the noodles in the 3 quarts of water, with 1 tablespoon of the olive oil added, until tender. Drain and shock in a rinse of cold water. Re-drain and set aside.
  • Season the steak pieces with the kosher salt and pepper.
  • Over medium-high heat, fry the steak pieces in 2 tablespoons of olive oil, stirring frequently, until they are nicely browned on all sides. When browned, remove the steak pieces and add the 3 tablespoons of butter to the drippings -- reduce the heat to medium.
  • When the butter has melted, add in the garlic and stir for 30 seconds and then, slowly whisk in the Wondra flour to form a fast roux (one minute). Then, again while whisking, add the beef broth.
  • When the broth begins to boil and thicken, reduce heat again, to low, and add the Kitchen Bouquet, sugar, mushrooms, and seasoned salt. (Taste before adding the salt to make sure it's not salty enough already -- regular beef broth often contains enough salt on its own for this dish.) Allow to simmer until it begins to bubble, about three minutes, and remove from heat.
  • Serve by plating noodles (re-heated in microwave), and then spooning beef tips/gravy over them.

This is a great soup that I found on a bag of Mrs. Grass Egg Noodles. I tried it tonight and found it was delicious enough to post for you all to enjoy. Very hearty soup and easy to prepare in one pot.

1 1/2 lbs lean sirloin steaks or 1 1/2 lbs round steaks, cut into cubes (I used stew beef)
1 cup chopped onion
3/4 cup chopped bell pepper (I used yellow and red)
2 cloves garlic, chopped
2 tablespoons olive oil
6 cups water
1 (28 ounce) can diced tomatoes
2 tablespoons instant beef bouillon or 6 beef bouillon cubes
1 1/2 teaspoons dried basil leaves
1/2 teaspoon fresh ground pepper
8 ounces fine egg noodles

Steps:

  • In a large kettle, over medium heat, cook and stir steak, onion, bell peppers and garlic in oil until vegetables are tender.
  • Add water, tomatoes, bouillon, basil and pepper.
  • Bring to a boil, reduce heat and simmer, covered for 40 minutes.
  • Add noodles; cook 5 minutes or until noodles are tender.
