Egg and Hash Brown Pie image

Not only is this casserole easy to make and great tasting, it's pleasing to the eyes with it's shades of golden brown, yellow, and green. This dish is great served with sliced fruit and toast or muffins. You may substitute chopped cooked ham for the bacon if you wish.

6 slices bacon
5 eggs
½ cup milk
3 cups frozen hash brown potatoes, thawed
⅓ cup chopped green onions
1 ½ cups shredded Cheddar cheese, divided

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
  • In a large bowl, beat together the eggs and milk. Stir in the bacon, hash browns, green onions, and 1 cup shredded Cheddar cheese. Pour into the prepared baking dish.
  • Bake in the preheated oven 25 to 35 minutes, or until a knife inserted in the center comes out clean. Sprinkle the remaining Cheddar cheese on top, and continue baking for 3 to 4 minutes, or until the cheese is melted. Remove from oven, and let sit 5 minutes before serving.

Steps:

  • Heat oven to 350 degrees F.

1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1 can (8 oz.) mushrooms, drained
2 cups frozen broccoli florets
4 eggs
1/4 cup milk
1/2 tsp. each dried thyme leaves and onion powder
1/4 tsp. pepper

Steps:

  • Heat oven to 375°F.
  • Press potatoes onto bottom and up side of 9-inch pie plate sprayed with cooking spray. Top with 1/2 cup cheese, mushrooms and broccoli.

1 tablespoon chili powder

19 ounces stewed tomatoes
1 1/2 cups mixed vegetables, frozen
3 cups hash browns, frozen
1 cup cheddar cheese, shredded
1 pinch salt and pepper
1 egg, beated

Steps:

  • In skillet heat oil over medium heat; cook onion and garlic, stirring for 3 minutes. Add beef, chili powder, oregano, salt and pepper. Cook, stirring to break up meat for 5 minutes.
  • Add tomatoes, breaking up further with spoon. Bring to a boil. Reduce heat and simmer for about 15 minutes or until thickened. Stir in vegetables. Spoon into greased 10" pie plate.
  • Topping: In a bowl, toss together potatoes, cheese, salt and pepper. Stir in egg and combine well. Spoon evenly over meat mixture.

1 1/2 teaspoons coarse ground black pepper
12 slices center-cut bacon
2 1/2 cups Original Bisquick™ mix
6 tablespoons cold butter
1/4 cup boiling water
1 cup frozen diced hash brown potatoes, thawed
1 1/2 cups shredded sharp Cheddar cheese (6 oz)
4 green onions, sliced (1/4 cup)
1 1/2 cups half-and-half
4 eggs
1/2 teaspoon salt
1 cup grape tomatoes, halved

Steps:

  • Heat oven to 425°F. Line 15x10-inch pan with foil; place wire cooling rack in pan. In small bowl, mix brown sugar and pepper. Sprinkle over 1 side of each bacon slice, pressing firmly. Place bacon on rack. Bake 18 to 20 minutes or until crisp.
  • Reduce oven temperature to 350°F. Spray 9 1/2-inch glass deep-dish pie plate with cooking spray. In bowl, place Bisquick mix; cut in butter, using pastry blender, until crumbly. Add water; stir vigorously until soft dough forms. Using fingers dipped in Bisquick mix, press dough on bottom and up side of pie plate, forming edge on rim of plate. Crumble 8 slices bacon. Sprinkle crumbled bacon, potatoes, cheese and onions in crust. In bowl, beat half-and-half, eggs and salt with whisk until blended. Pour over ingredients in crust.
  • Bake 50 to 55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes. Cut into 8 wedges. Cut remaining 4 slices bacon in half. Top each wedge with bacon and tomatoes.

1/2 teaspoon dried parsley

Cheesy Hash Brown Topping
6 cups frozen hash browns
1 1/2 cups sharp cheddar, divided
1/2 cup shredded Parmesan cheese
1/2 cup sour cream

Steps:

  • 1.Hash Brown Topping: Heat 2 tablespoons olive oil over medium heat in a large nonstick skillet. Add hash browns in a single layer and cook undisturbed for 5 minutes. Flip hash browns and cook another 5 minutes. (They will not be all the way cooked - just golden in some places.) Set aside to cool. 2.Meat and Vegetables: Brown beef and onions in a 12" oven proof skillet* over medium high heat until beef is cooked through. Drain off excess grease. 3.Add garlic and sauté 30 seconds. Sprinkle flour over meat and cook while stirring for 2 minutes.
